When I fancy something sweet for breakfast I run to pancakes. But we all know they aren’t great for us lymphies. What I now do is head for the protein and oats!
This recipe makes around 3 small- medium pancakes.
What you’ll need:
1 cup protein powder (I prefer vanilla so I can add any flavours, fruit etc.)
0.5 cup of water
1 pouch of microwavable porridge oats (usually about 42g)
3 drops of Capella flavouring of your choice (I adore sugar cookie!- flavouring is optional)
Small amount of oil to line the pan.
What to do:
Whisk together the protein powder, water, egg and flavouring (optional) until pancake batter is formed.
Add the oats and stir in until evenly mixed.
Heat a small amount of oil in the pan to stop them sticking.
Spoon in mixture. Don’t attempt to flip until air bubbles start forming in the mixture.
Top with maple syrup, fruit etc.
